Tart Cherry Mojito

Ingredients:

Cherry "Red Eye" Mojito

Cherry "Red Eye" Mojito

2 1/2 teaspoons super fine granulated sugar

3 Tablespoons tart cherry juice

12 mint leaves

Squeeze of fresh lime juice

1 ounce white rum

1/2 cup soda or seltzer water

Ice

Directions:

Place 6 mint leaves in a tall glass. Crush mint leaves with a muddler, or with the back of a spoon. Add sugar, tart cherry juice, lime juice, white rum and ice. Mix well. Finish drink with soda water and remaining mint leaves. Stir to combine and serve.

Yield: 1 serving.

    Are these made with regular tart cherry juice or the concentrate?

    They are made with regular (single strength) tart cherry juice, which can be made by mixing one part tart cherry juice concentrate to 7 parts water. The concentrate is a great mixer, so you can be creative and vary the strength according to your own tastes. Enjoy! Patty

    Thanks, Patty! Phil let me sample some tart cherry juice concentrate yesterday (I think it came from King Orchards) and I was blown away by the flavor. Will be great not only for mixed drinks, but also sauces and dressings. Can’t wait to experiment with it!

    This is the best mojito I’ve had yet. They always sound good but when I’ve ordered one in restaurants I’ve always been disappointed. This one did not disappoint! Refreshing, not too sweet, great flavor.
