They are harvested and frozen at their peak ripeness to preserve quality, texture, and flavor. Available in two varieties; Montmorency and Balaton. The Montmorency is the traditional pie cherry, bright red in color and very tart in flavor. The Balaton is a slightly sweeter tart cherry, darker in color and more firm than the Montmorency. Both work great in desserts and jam.
