Cherry Almond Biscotti

1 stick unsalted butter
1 cup sugar
zest of one lemon
2 eggs
2 cups flour
pinch of salt
1 1/2 tsp. baking powder
1 cup sliced almonds
1 cup King Orchards dried tart cherries

Cream butter, add sugar slowly, add zest.
Add eggs one at a time

Sift flour, baking powder and salt together and add to creamed mixture slowly. Do not overbeat.

By hand, incorporate almonds and cherries.

Form into log, bake 40 minutes @ 350. Let cool.
Cut into 1/2″-3/4″ slices. Place on cookie sheet and bake 15 more minutes.

note: Rose baked these and brought them into the office last week. Seriously good!
